Instructions
Step 1
preheat oven to 400 F - cook rice in rice cooker
Step 2
in a medium skillet add oil and chopped onions - cook for 5 minutes
Step 3
stir in tomato paste and garlic and cook for 1 minute
Step 4
add ground beef and brown - about 6 minutes - drain fat
Step 5
add cooked rice, diced tomates, and beans - season with salt, pepper, and oregano - simmer until liquid is reduced
Step 6
cut peppers in halves (or take top off) and place in cooking pan - drizzle with oil and spoon in the mixer into the peppers - sprinkle with cheese
Step 7
cover with aluminum foil and place in the oven for 35 minutes - uncover and let cheese bubble (about 10 more minutes) - garnish with choice of herbs
