Instructions

Marinade

Step 1
Wash lemongrass, chop off its ends and pound it using mortar and pestle or something hard so it is bruised and loose before chopping it finely.

Chop garlic cloves finely

Mix in a bowl (large enough to hold beef)

Sprinkle pepper
Step 5
Add 1 tsp sugar
Step 6
Add a drizzle of fish sauce

Add thinly sliced beef and mix, and let it rest for 10 minutes

Dressing

Mix 1-1-5 ratio of fish sauce, sugar and water

Add thinly chopped red chillies

Add 2 portions of lime (i.e. 1-1-5-2 ratio)

Salad

Crush unsalted peanuts in mortar and pestle or in mill

Thinly slice carrots

Thinly slice cucumber. Discard the inner part with seeds

Chop sliced sliced carrots and cucumber into smaller pieces

Noodles

Search YouTube on how to cook rice noodles and edit these instructions

Pan fry

Step 16
Wash sprouts thoroughly in a deep bowl

Pan fry sprouts in 1 Tbsp oil without a lid. Roughly 5 minutes. Remove from pan.

Keep pan very hot. Add beef to 1 Tbsp oil. Turn to make sure all sides are cooked. Don't use lid. Use large pan so all beef is touching pan. 5-10 minutes.

Serving

Add noodles, cucumber, carrots, sprouts. Add beef on top. Add mint leaves. Sprinkle crushed peanut. Add dressing to taste.
