Instructions

Step 1
Season chicken with salt and pepper, heat oil in 12inch skillet over medium-high heat. Arrange chicken in skillet, turn heat to medium. Cook 3-4 minutes or I still browned on bottom. Turn and cook 2-3 more minutes until done or until internally 165*F. Remove chicken and pour dripping out, do not wipe.
Step 2
Meanwhile, steam peas in steamer basket (2 qt) until just crisp-tender. Remove peas to bowl and season with salt and pepper to taste.
Step 3
Remove 1 tsp zest and 1 tbs juice from lemon. Add cream to skillet, bring to boiling, then reduce to simmer. Cook about 1 minute or until slightly thickened. Remove from heat, stir in lemon zest and juice, basil, and salt/pepper. Serve over chicken and peas.
