Instructions

Step 1
Soak the glutinous rice in a bowl covered with at least an inch of water above the rice for about 4 hours. While the rice is soaking, prepare the meat filling.
Step 2
In a large bowl, add ground pork (80% lean), ginger powder, scallions, water, Shaoxing wine, cornstarch, white pepper, sea salt, and sugar. Stir to combine everything well.
Step 3
Line the steamer with liners.
Step 4
After 4 hours of soaking, drain the glutinous rice, and do your best to shake off any excess water
Step 5
Take about a tablespoon of meat filling, form a ball and roll it in the glutinous rice so that the whole surface is coated. Roll it between your palms lightly to ensure all the glutinous rice adheres to the meatball. Position the meatballs on the steamer liner with about 1/4 to 1/2 inch separation distance.
Step 6
Boil water. Steam over high heat for 20 minutes. After steaming, turn off the heat, and let the meatballs sit with the cover on for 3 additional minutes before removing the lid and serving.
