A simple potato salad that you can eat as a great side dish with meat or just as a light dinner.

Step 1
First, boil the potatoes in their skins. Once they are soft (it all depends on the size of the potatoes, but generally takes about 30 minutes), let them cool and cut them in half. Then in a large bowl, mix the potatoes with the mustard, cream, parsley and salt and serve!
