Simple Tofu Green Curry Recipe 💚
A suuuper budget friendly vegan dinner or lunch idea. Would be amazing for cheap meal prep too! This easy recipe only cost $9 to make. If you ordered this out it would close anywhere between $12 - $20 for one serve.
FYI I purchased everything from Woolworths! The snow peas were on clearance hence the cheap price and I only used half the broccoli. You can easily swap all these veggies for whatever is on special! If I’m on a budget I try to find produce that is under $4 per kilo.
The green curry paste is the cheapest and the tastiest, it is quite spicy though so if you want something a lil less spicy, opt for a red or yellow curry paste.

Step 1
Cube tofu (smaller than what I did in the video haha) and air fry for 15 minutes at 200C until golden and crisp
Step 2
Meanwhile bring a pan to medium heat with the olive oil, add the curry paste and sauté for 3 minutes
Step 3
Add the coconut cream and stock, mix well and bring to a simmer
Step 4
Add the tofu to the pan and simmer for 5 minutes then add the snow peas and simmer for a further 5 minutes
Step 5
Add the broccoli and simmer for 1 minute then add the zucchini and simmer for 1 more minute then turn off the heat (I like my veggies pretty firm but cook for longer if you prefer them softer)
