Instructions
Step 1
Preheat oven to 300 F. Line two baking sheets with parchment paper

Step 2
In a small sauce pot over medium heat, whisk together maple syrun and sugar until sugar is dissolved. Remove from heat and cool.
Step 3
In a large mixing bowl, whisk egg whites until foamy. Add salt, cinnamon, nutmeg, cayenne and cloves and whisk until well combined.
Step 4
Add maple syrup mixture to egg white and whisk until combined. Add the nuts and stir the mixture until the nuts are well coated
Step 5
Divide the nuts between the two baking pans and spread them into a single layer. Pour any letover maple syrup mixture on top of the nuts
Step 6
Bake, tossing the nuts every 10 minutes or so, until the maple syrup has evaporated and the nuts are only slightly sticky (about 30 min). DO NOT SKIMP ON TURNING or you will let the nuts burn.
Step 7
Remove from oven and stir well. Allow to coll, and stir again, breaking up clusters if desired. Store in an airtight container
