Chop, julienne or dice 1 large onion/2 medium onions.

Melt butter over med-high heat until melted, in a deep saucepan/pot.

Add onions and stir occasionally, until the onions turn translucent.

Once onions are sautéed, add 1 can of chopped tomatoes. Stir while on med-high heat.

Drain and rinse lentils with cold water in sieve.

Add lentils to mix, and stir occasionally to prevent from cooking off too soon.

Using the chopped tomatoes can, fill half with water and add to lentil mix.

Stir lentil mix and slightly lower heat, so the lentils and tomatoes start to simmer.

Bring salted water to a rapid boil and add 250g of spaghetti.

Add desired amount of spices and herbs to lentil mix while stirring, to ensure lentils are completely simmered in the flavours.

NOTE: don't add too much salt, or it will reduce the lentil mix too quickly (salt naturally cooks off water quickly).

Drain pasta in sieve over sink once al-dente (soft, but still has bite).

Take lentil mix off heat once it has thickened.

Grate and add a handful of cheese to lentil mix, to additionally thicken.

Add spaghetti to lentil mix and mix through, or separate and heap a few spoonfuls of the lentils onto the spaghetti. Cook's choice!

Add a generous pinch of cheese, salt, pepper and chilli flakes to finish.

Serve with fresh garden salad and garnish with fresh basil.
