Ingredients

2 Tbspvegetable oil
1.5 lbshrimp
medium, peeled, deveined, and coarsely chopped
1onion
medium, chopped
2cloves garlic
minced
1.25 oztaco seasoning
2 x 15 ozcans red beans
or pinto beans rinsed and drained
28 ozcan diced tomatoes
undrained
14.5 ozreduced-sodium chicken broth
15 oztomato sauce
2jalepeno peppers
or serrano, minced
8 ozcream cheese
cubed and softened
1 cupshredded monterey jack cheese
6 slicesbacon
cooked and crumbled
Instructions
Step 1
In a 5 to 6 quart pot, heat oil over medium-high. Add shrimp and season with salt and pepper. Cook, stirring occasionally, 3 minutes or until shrimp is pink and opaque. Using a slotted spoon, remove shrimp from pot.
Step 2
Add onion and garlic to pot. Cook, stirring occasionally, over medium heat for 5 minutes or until onion is softened. Stir in taco seasoning.
Step 3
Stir in the next 5 ingredients (through jalapeno). Bring to boiling. Reduce heat and simmer, uncovered, for 10 minutes.
Step 4
Remove pot from heat. Stir in cream cheese and 1/2 cup of the Monterey jack cheese. Cover and let stand 10 minutes; wiskuntil cheeses are smoothly melted. Stir in shrimp and bacon.
Step 5
Top servings with remaining shredded cheese and, if using, paprika and radishes.
