Ingredients

1 sprigthyme
chopped
100gdried cannellini beans
40mlextra virgin olive oil
1onion
quartered
2garlic cloves
crushed
1 sprigrosemary
chopped
1 litrechicken stock
200gsquid
cleaned and halved
2shallots
finely diced
1 tspsmoked paprika
200gcherry tomatoes
2 tsptomato puree
125mlwhite wine
60gunsalted butter
0.5 bunchflat leaf parsley
Instructions
Step 1
Soak beans in cold water overnight
Step 2
Cook onion, ONE garlic clove, rosemary and thyme for 5 min in half the oil (20ml)
Step 3
Add drained beans and stock, cook beans (to packet instructions) till soft not mushy.
Step 4
Remove and bin any large onion pieces, keep liquid but strain and retain beans.
Step 5
Dice squid and cook in rest of oil with shallots for 2-3 mins.
Step 6
Add paprika, remaining garlic, tomatoes and puree.
Step 7
Cook for a few mins, add wine, reduce by half. Add beans and keep on low heat until ready to serve and beans warmed through.
Step 8
Add retained stock if needed, or a small amount of it (if any) to get desired quantity and consistency.
Step 9
Taste for seasoning and adjust. Stir in butter and parsley.
