Ingredients

1 cupyellow onion
chopped

3cloves garlic
minced

12 ozcan of fire roasted tomatoes

15 ozcan kidney beans

15 ozcan black beans
rinsed

3 cupsvegetable broth

2 tablespoonschili powder

2 tablespoonscoconut sugar

1 ½ teaspoonscumin

1 ½ teaspoonsgarlic powder

1 ½ teaspoonsonion powder

2 cupssweet potato
peeled and chopped

1 tablespoontomato paste

4whole tomatoes
roasted

2 tablespoonsfresh lime juice

10 oztomato juice

1jalapeno
roasted

1 cupraw cashews

¼ cupfresh lemon juice

¼ cupwater

1 teaspoonhimalayan salt
Instructions
Step 1
core tomatoes. Roast tomatoes and jalapenos until done. Deseed jalapenos and set aside.
Step 2
Sautee onions, garlic until translucent.
Step 3
stir in cumin, chili, onion and garlic powder.
Step 4
combine rest of ingredients except cashews, lemon juice, Himalayan salt and water. Cook until sweet potatoes are tender.
Step 5
To make a vegan sour cream combine cashews, lemon, salt and water into a food processor. blend until desired consistency
