Step 1
Cook jasmine rice.
Step 2
Heat sauté pan. Add olive oil. Sauté garlic and fennel until caramelized. Add salt, pepper and white wine. Add tomatoes. Sauté until all saucy and yummy. Push to the sides, add more olive oil and sauté shrimp 2-3 minutes until just pink.
Step 3
Serve shrimp and veggies over rice with feta, fennel fronds and micro greens. Drizzle with olive oil if desired.
