Preparation
Step 1
Using a spiralised or vegetable peeler to create zucchini noodles (Zoodles).
Cooking
Step 2
In a large frying pan, melt butter over a medium heat. Add bacon and fry for 4-5 minutes until crispy. Remove from the heat and set aside.
Step 3
Pour cream into a saucepan over medium-high heat and bring to a boil. Add a pinch of salt. Reduce the heat and continue to gently boil until the cream has reduced down to approximately one quarter.
Step 4
Remove the saucepan from the heat and allow the cream to reduce in temperature, stirring occasionally to prevent a skin from forming.
Step 5
While the cream is reducing, in a seperate bowl combine the egg yolks, cooked bacon including the fat and parmesan cheese. Add to the cream, stirring continuously to ensure the egg does not scramble. Add salt and pepper to taste.
Step 6
Return the saucepan to medium-low heat to gently warm the sauce. Add the Zoodles to the saucepan and warm through for 1-2 minutes.
Step 7
Meanwhile bring a pan of water to the boil. Stir the water to create a gentle whirlpool then break the eggs into the centre. Cook for 3-4 minutes until the white set but the yolk is still runny.
Step 8
Serve the Zoodles into even serves. Top each with a poached egg and season with salt and pepper.
