Instructions
To cook pasta
Step 1
Cook spirulina fettuccini as per packet instructions.
Step 2
Drain.
To make the sauce
Step 3
Add the olive oil, broccoli, sweet potato, cherry tomato, tempeh to frying pan and saute for about 2 minutes.
Step 4
Add the sundried tomato, sweetcorn and spinach.
Step 5
Saute for 30 seconds.
Step 6
Add in the hot drained pasta, tomato sauce and half of the pesto.
Step 7
Warm gently, add nutritional yeast and a pinch of salt and pepper – check seasoning.
Step 8
Add the rocket leaves just before serving.
Step 9
Serve garnished with a few more rocket leaves, pumpkin seeds and drizzle of pesto.
