Instructions
Step 1
1. Pre heat the oven to 200c fan.
Step 2
2. In a deep dish, tip in the whole tomatoes, olives, capers, sliced garlic, chopped anchovies, oregano and chilli. Season with salt and pepper and a drizzle of extra virgin olive oil.

3. Mix everything together and roast for 10 minutes.
Step 4
4. Put a pan of water onto the boil, season well with salt and cook the pasta until al dente. Drain and set to one side.
Step 5
5. After 10 minutes, remove and place the salmon fillets on top of the tomatoes. Bake for another 8-10 minutes until the salmon is cooked through.
Step 6
6. Remove the salmon, flake and add back onto the tomato mix. Mix in some fresh chopped parsley and a little grated parmesan. Toss everything together, adding a little pasta water if needed.
Step 7
7. Serve with an extra scattering of parsley and a little grating of parmesan if you wish.
