Instructions
Step 1
Melt butter and oil in pan, fry diced onions and crushed garlic
Step 2
Add mushrooms (finely chopped) , wait to brown
Step 3
Add spices (paprika, herbs, chilli flakes)
Step 4
Add grated carrot and courguette
Step 5
Add red wine to deglaze
Step 6
Add stock cube, chopped tomatoes and 400ml water
Step 7
Add balsamic vinegar, soy sauce, marmite, worcestershire sauce, gravy granules and bay leaves
Step 8
Sprinkle a layer of lentils to cover the pot, reduce the heat and add a lid let
Step 9
Let simmer 30mins to 1 hour, stir regularly to ensure the lentils don't stick to the bottom
