Step 1
Use a fork to mash the tofu in a bowl. Once mashing is done, add in the garlic powder, nutritional yeast, tumeric, salt and pepper in the same bowl. In a nonstick pan heat 2 tbsp oil and add in tofu mixture. Sauté the tofu scramble until the heat absorbs all the moisture from the tofu. Then add in the spinach, cook till soft and tender. Finally remove from the heat and serve while it still hot.
Step 2
Also in the bowl: Broccolini, avocado, purple cabbage, tomatoes, strawberries, pomegranates, chickpeas.
