Step 1
Dice the onion. Toss into a heated saucepan and lightly fry in the oil. Dice the potato and add to the saucepan, along with the garlic and basil. Toss until the vegetables are fully coated by the basil. Dissolve the stock cube in 1 pint of boiling water and add to the saucepan. Top up with a second pint of boiling water. Stir and bring yo the boil, then reduce to a medium heat and allow to simmer for 20 minutes. Allow to cool slightly, then transfer to a jug blender, add the nutmeg and blitz until smooth. Makes 4 portions.
