Instructions
Step 1
Cook meat and add Taco seasoning per directions.
Step 2
Preheat oven to 350. Spray one side of each corn tortillas and stack on baking sheet. Bake 3-4 minutes. Wrap in clean cloth towel.
Step 3
Prep baking dish or cookie sheet with cooking spray.
Step 4
One at time remove tortillas from towel and dip in Enchilada sauce.
Step 5
Place about 2 tbsp meat and 1 tbsp cheese in tortillas and roll. Place in prepared dish or cookie sheet.
Step 6
Repeat steps 3 and 4 until sheet or dish is filled.
Step 7
Drizzle Enchilada sauce over top the rolled enchiladas.
Step 8
Sprinkle with cheese and olives (or make more decorative).
Step 9
Bake for 20-25 minutes
