Step 1
Cover the bottom of a pan in olive oil. Medium low heat sauté the diced garlic, shallot and chili flake until they are aromatic. About three minutes. Add the white wine and cook off the alcohol. About 2-3 minutes. Up to Medium high heat for that. Now add the stock and the clam juice. Jack the heat to high. Drop the clams in and cover. Steam for 6-10 minutes. If the clams open during the steam they’re good. If they don’t open they were dead and you will feel like you’re dying if you eat them. Remove finished clams and place in serving bowl that can handle some fluid. Pour the pan broth over the clams. Garnish with basil to taste. Set your toasted sourdough into your plate/ bowl.
