½ tablespoonno sugar yoghurt
plain
½ teaspooncurry powder
¼ teaspoonground cinnamon
white pepper
1 teaspoonflaked almonds
lightly crushed with a pestle and mortar
2 teaspoonssultanas
3Quorn pieces
palm size and thickness amounts of
1 teaspoonextra virgin olive oil
2wholemeal wraps
2little gem lettuce leaves
1tomato
medium, sliced
1 heaped teaspoonfresh coriander
chopped
Instructions
Step 1
In a bowl make the coronation sauce by mixing the yoghurt, curry powder, cinnamon, pepper, almonds and sultanas and leave to one side.
Step 2
In a pan, stir fry the Quorn pieces in the extra virgin olive oil on a medium to low heat for around 10 minutes until it starts to brown.
Step 3
Add the Quorn pieces to the coronation sauce and mix thoroughly to ensure all the Quorn pieces are coated in the sauce.
Step 4
Heat your wrap - I like to place mine on the gas ring for around 20 seconds on each side, turning regularly to ensure it doesn’t burn. Alternatively, you can dry fry in a non-stick pan for around minute on each side, or warm them in the oven on a low heat for around 5 minutes.
Step 5
Now layer your wrap with the lettuce, quorn mix, tomato and dress with fresh coriander. Fold and enjoy!

I just made this in 10 minutes, for a quick lunch. I used a qtr teaspoon of all my curry spices, mixed into 2 tablespoons of fat free yogurt with grated carrot and a little mango chutney. Fried quorn pieces in olive oil and chilli powder. Mixed together. Served in sandwiches with low fat mayo. Amazing!!! Thanks for the idea x
