notes for the cook Pad kee mao, also known as drunken noodles for its reputation as an ideal hangover remedy, is a deeply flavorful, satisfying Thai dish made from rice noodles, meat, and vegetables in a savory, sweet, and spicy sauce. This recipe uses pantry-friendly ingredients to replicate the savory, sweet, and slightly bitter flavor of the traditional Thai sweet soy sauce, which can be difficult to find. Note that you'll need ½ cup of Thai basil, so shop accordingly. While we prefer the unique flavor of Thai basil, Italian basil can be used in its place. If fresh Thai chiles are unavailable, substitute two medium jalapeños.

Instructions

Step 1
Soak Noodles Bring 3 quarts water to boil in large saucepan. Place noodles in large bowl. Pour boiling water over noodles. Stir, then let soak until noodles are soft and pliable but not fully tender, stirring once halfway through soaking, 12 to 15 minutes. Drain noodles and rinse under cold running water until water runs clear. Drain well and set aside.
Step 2
Make Sauce and Prep Vegetables and Aromatics While noodles soak, squeeze ⅓ cup lime juice from 3 limes into small bowl; cut remaining lime into wedges. Whisk broth, soy sauce, molasses, and fish sauce into bowl with lime juice; set aside. Stem and seed bell peppers, then cut into 1-inch pieces. Slice onion in half, then cut into ¼-inch-thick slices. Mince garlic. Stem chiles and slice into thin rings.
Step 3
Cook Bell Peppers Heat 1 teaspoon oil in 12-inch nonstick skillet over high heat until just smoking. Add peppers and cook, stirring occasionally, until spotty brown and tender, 4 to 5 minutes; transfer to large serving bowl.
Step 4
Cook Onion and Aromatics Heat remaining 2 teaspoons oil in now-empty skillet over high heat until just smoking. Add onion and cook, stirring occasionally, until softened and lightly browned, about 3 minutes. Stir in garlic and chiles and cook, stirring constantly, until fragrant, about 30 seconds.
Step 5
Cook Pork Stir pork into onion up meat with wooden spoon and stirring occasionally, until lightly browned, 3 to 5 minutes. Stir in ¼ cup sauce and cook, stirring often, until sauce is thick and syrupy, 1 to 2 minutes. Transfer pork mixture to bowl with peppers.
Step 6
Finish Dish Add remaining sauce and noodles to now-empty skillet and cook over high heat, stirring often, until sauce has thickened and noodles are well coated and tender, about 3 minutes. Transfer noodle mixture to bowl with vegetables and pork and toss to combine. Tear ½ cup basil leaves over noodles. Serve with lime wedges.
