Step 1
Step 1 Preheat the oven to 220°C.
Step 2
Heat the oil in a frying pan, add the onion, pepper, courgette and garlic and fry gently for 3-4 minutes until softened.
Step 3
Stir in the lentils, passata and basil then remove from the heat and season with salt and pepper.
Step 4
Step 2 Spoon the vegetable mixture into an ovenproof dish, top with the mozzarella then bake for 15 minutes until the cheese is bubbling and golden.
Step 5
Leave to cool slightly before serving.
