Ingredients
4 servings
1 poundshrimp peeled and deveined
2 tablespoonolive oil
or canola oil
¾ teaspoonseasoned salt
I used creole seasoning
0.5onion
diced
0.5Jalapeno
diced
2 teaspoonsminced garlic
2 teaspooncurry powder
½ teaspoonsmoked paprika
1 sprigthyme
½ teaspooncayenne pepper
adjust to suit taste buds
1 Tablespoontomato paste
or more
½ cupcoconut milk
or use chicken broth
2 tablespoonparsley
chopped
½ teaspoonwhite pepper
optional
salt
to taste
Instructions
Step 1
Lightly season the shrimp with creole spice. Heat about 2 tablespoons of oil over medium heat in a heavy bottomed Dutch.
Step 2
Sauté for about 3 -5 minutes shrimp set aside.
Step 3
Add jalapenos, thyme, and garlic. Stir for about a minute, followed by onions , curry powder, smoked paprika, white pepper ,coconut milk, and broth, add the remaining oil if needed.
Step 4
Bring it to a boil then simmer for about 7-10 minutes. Toss in shrimp, Adjust for salt / pepper and thickness with broth . Add chopped parsley. Serve over rice and/or vegetables.
