Cheesy Brunch Scramble

Instructions

Step 1
Pour the oil into a lidded, non stick frying pan & place over a medium high heat. Add the peppers & 2 tbsp water, cover & cook for 5 minutes or until just tender. Add the beans & half the spring onions, cover again & cook for 5 minutes or until the spring onions are soft & the beans have heated through. Reduce the heat to medium.
Step 2
Preheat the grill to high.
Step 3
Season the eggs, add them to the pan & gently scramble with a spatula until they are almost done but still moist & very slightly soft here & there. Remove the pan from the heat.
Step 4
Scatter the tomatoes, remaining spring onions & the cheese over the dish. Finish under the grill for 2-3 minutes or until set to your liking. Serve hot.
