Step 1
Preheat oven to 200°C
Step 2
Heat oil in frying pan, then add de-stalked spinach and crushed garlic. Cook until wilted.
Step 3
Place in bowl to cool down, then mix in cottage cheese. Leave to one side.
Step 4
Fry onions and mushrooms together until caramelized. Then add stock cubes (no water) and let them dissolve, then add the tinned tomatoes, ketchup and herbs.
Step 5
Heat through, then layer in a greased ovenproof dish (tomato / pasta / cottage cheese then repeat).
Step 6
Top off with mozzarella cheese
Step 7
Place in preheated oven for 40-45 mins (foil on for 20mins, then foil off).
Once removed, let it stand for about 10mins for juices to settle.
Step 8
Serve with garlic bread
