Chicken san choy bau

Instructions

Step 1
Heat a large wok or frying pan over high heat and add the oil and garlic. Stir-fry for 1 minute until fragrant.
Step 2
Add the chicken mince and cook, stirring for 2-3 minutes until the mince changes colour. Add the green beans, carrot and mushrooms and continue to stir-fry for 3-4 minutes until the vegetables are tender and the chicken is cooked.
Step 3
Stir through the hoisin sauce and lemon juice, then season lightly and toss to combine.
Step 4
Remove the wok from the heat and toss through spring onions.
Step 5
Place 2 lettuce leaves into two serving bowls each and spoon chicken mince into cups.
