Step 1
You will need a fish poacher or you can make one using double layer of tinfoil. Place the fish in the poacher, add olive oil, salt, pepper and capers. Slice your orange and lemon to layer over the top of fish. Cut separate lemon and orange and squeeze juice over the top. Put on the lid and cook for 20 minutes at 180 degrees. Take out of the oven check and return for further 20 minutes. If you are using a stainless steel poacher it may take longer. I made my own poacher using doubled up tinfoil and made my own lid.
