Step 1
Remove the coarse outer leaves of the cabbage. Quarter, remove the core, wash and cut into very fine strips (using a mandoline if desired). Peel, quarter, core and dice the apples and peel and dice the onions. Melt the lard and saute the onion. Add the cabbage and apples and saute. Add the bay leaf, cloves, juniper berries, salt, freshly ground pepper, sugar, vinegar, redcurrant jelly and water. Cook until tender and season with salt and sugar.
