Lemon Barbecue Chicken Caesar Salad w/ Air Fryer Croutons

Juicy barbecued chicken with herbs and lemon. Chopped romain, spinach, and arugula, thinly sliced red onion, tomato, toasted pepitas, with shaved Parmesan, crumbled feta and goat cheese. Warm and crispy croutons tossed in olive oil, garlic powder, and herbs toasted in the air fryer and tossed with a tangy Caesar dressing topped with freshly ground pepper.

Instructions

Step 1
I like to take large chicken breasts from the butcher and thinly slice them myself. Or… One at a time, place the chicken breasts in a 1-gallon zip-lock bag; using a meat mallet, pound to an even ½-inch thickness.
Step 2
Mix all of the ingredients except for the chicken together in a 1-gallon zip-lock bag (go ahead and use the same one you used for pounding if it is still in good shape). Add the chicken breasts to the bag and massage the marinade into the meat until evenly coated. Seal the bag and place in a bowl in the refrigerator (the bowl protects against leakage); let the chicken marinate for at least 30 minutes, but results will be much better the longer you marinate.
Step 3
Preheat the grill to high heat and oil the grates. Place the chicken breasts on the grill and cook, covered, for 2 to 3 minutes per side. Do not overcook. Transfer the chicken to a platter and rest for a minimum of 4 minutes.
Step 4
While chicken is resting chop your tomatoes, onion, and salad greens. Add to a large mixing bowl.
Step 5
Add your diced baguette to bowl and mix olive oil and spices. Place in air fryer at 375 degrees for 7-10 minutes until golden brown.
Step 6
Mix cheese and croutons with salad greens, and chopped chicken. With a pair of tongs gradually add your dressing until evenly coated. Serve immediately.
