Step 1
Make rice in rice cooker
Preheat oven to 400 degrees and line baking sheet with parchment paper. Add the broccoli and olive oil and sprinkle with salt, toss to combine. Bake for 15-20 mins, set aside
While the broccoli cooks, cut up carrots, red pepper
In a bowl,add tempeh along with half of the sesame oil, half of the tamari and half of the lime juice. Let sit for 5 mins. Heat a pan over medium heat and add the tempeh. Cook for 8-10 minutes, flipping halfway through. Remove and set aside.
In a blender add the remaining sesame oil, tamari, lime juice AND maple syrup and peanut butter and blend until smooth and creamy
Divide amongst bowls and top with peanut sauce
