Instructions
Step 1
Clean and pat chicken pieces dry, cut into serving size pieces
Step 2
Shake chicken in bag with flour, salt and pepper (shake in batches for even coating
Step 3
Heat olive oil in large heavy skillet
Step 4
Brown chicken in hot oil
Step 5
Add garlic and onion, tomatoes, wine, herbs
Step 6
Cover and simmer over low heat about 30 minutes, or until thickest pieces of chicken are tender when pierces with a fork.

Sauté the butter and mushrooms in a small skillet
Step 8
Add to chicken, along with the olives.
To thicken the liquid
Step 9
Put consommé into screw-top jar and sprinkle flour over it, cover and shake well.
Step 10
Remove chicken from skillet and discard herb bouquet.
Step 11
Gradually add the floured consommé liquid to skillet, stirring constanly.
Step 12
Boil 3-5 minutes until mixture thickens.
Step 13
Return chicken to sauce, cover and simmer 10 minutes.
Step 14
Arrange chicken on a hot platter. Cover with the sauce.
