Ingredients
4 servings
Marinade
½ cuptamari sauce
soy
4 Tbsprice vinegar
2 Tbspagave syrup
maple
2 Tbspsesame oil
2 Tbspminced garlic
2 Tbspminced ginger
2 tspred chili flakes
Assorted vegetables
2scallions
1 cupred cabbage
chopped
1zucchini
cubed
2carrots
cubed
1 cupsliced mushrooms
1 cupbroccoli
1 cupred peppers
sliced
2 Tbspmint leaves
chopped
2 Tbspbasil leaves
chopped
Optional
roasted sesame marinade
chilli garlic sauce
Instructions
Step 1
In a medium mixing bowl, add 1/2 cup tamari/soy sauce, 4 tbsp vinegar, 2 tbsp Agave/maple syrup, 2 tbsp sesame oil, 2 tbsp of minced garlic and grated ginger each and 2 tsp red pepper flakes. Mix well
Step 2
Cut 16 oz. super firm tofup into cubes and add to the marinade. Gently fold it into the marinade and set aside
Step 3
Make the soba noodles as per package directions and drain with cold water. Keep aside
Step 4
In a large pan, heat 3 tbsp of sesame oil
Step 5
Sauté an assortment of your favorite veggies. I used scallions, carrots, zucchini, red cabbage, mushrooms, broccoli and red peppers
Step 6
Add 2 tbsp of the roasted sesame marinade from @costco and chili garlic sauce for extra flavor. You can skip this step if you don’t have either
Step 7
Add 2 tbsp of chopped basil and mint leaves and 2 tbsp of white and black sesame seeds. Mix everything well until the veggies are slightly soft.
Step 8
Now add the tofu and mix well along with the marinade.
Step 9
Serve soba noodles into individual dishes and top with the veggies tofu mix. Garnish with some lettuce, additional chopped scallion greens and herbs and enjoy!
