Instructions

The butternut

Step 1
Preheat the oven to 220 degrees celcius
Step 2
Mix the chunks with a glug of olive oil, salt and pepper on a baking tray
Step 3
Roast for 30-35 mins until desired texture
Step 4
Let cool for 5 mins then add to a bowl with the spice mix

For the dressing

Step 5
Mix all ingredients together in a small tub and shake until mixed. Add more water if needed

Making the salad

Step 6
Add about 1/2 the dressing to the butternut with some salad leaves, feta, chopped olives, chopped tomatoes and pomegranate seeds
Step 7
Add protein/grains if desired. Plate up and drizzle with more dressing if desired
