Instructions
Seasoning the flour
Step 1
Pour 50g flour into a mixing bowl and add the mustard powder. Season with salt and pepper to suit your taste. You can add more seasoning later if required
Coating the meat
Step 2
Add 700g stewing steak to the bowl and coat with flour, then place in the slow cooker pot. No need to brown the meat when using a slow cooker.
Making the stock
Step 3
Add to the meat 150ml water 350ml dark ale 1 Tbsp brown sugar 1 Tbsp garlic paste 1 Tsp Thyme 1 bay leaf 2 sliced onions 1 sliced celery stick.
Cooking
Step 4
You can vary the cooking time to suit your schedule, we cooked ours on high for 6 hours. The meat was tender and the sauce rich and tasty. Remove the lid for the last 30 minutes of cooking time to help reduce and thicken the stock.
Side serving
Step 5
The French serve this with Garlic Baguette. You can buy a ready made one or melt 50g butter and add 1 Tsp Garlic paste & 1 Tsp Parsley to it before spreading it on slices of Baguette. Then place under the grill or in the air fryer and cook until golden brown & crunchie.
Dishing up
Step 6
We made up some creamy mash potato and Julienne carrots to go with our Beef Carbonade, but you can add whatever takes your fancy. All I know is when I'd finished eating it I wanted to eat it again.
