Instructions
Step 1
Place cashews in small pot, cover with water and boil
Step 2
Place pasta in large pot, cover with 4 cups water and boil
Step 3
In pan add deiced onion and garlic, saute med-high for 10 min, cook until the liquid is gone but don't burn onions
Step 4
Add onion/garlic to blender, add 1/2 cup broth, drained cashews, salt, pepper, yeast and blend for 1 minute or until smooth, should not be gritty, add extra broth 1 tbsp at a time if too thick
Step 5
Serve with drained noodles and garnish with lemon zest, black pepper, parsley, cilantro or chili flakes
