Instructions
Step 1
Cut the chicken into small to medium sized chunks.

Step 2
Marinate the chicken.




Step 3
Slice the garlic. Roughly chop the onion, capsicum and tomatoes.




Step 4
Mix all the sauce ingredients in a bowl.





Step 5
Once chicken is marinated, coat the chicken pieces in tapioca starch.

Step 6
Add palm oil to the wok on low-medium heat. Use enough for shallow frying.

Step 7
Once the oil is hot and bubbly, add the chicken to the wok.
Step 8
Fry the chicken and turn according to the colour. Chicken should be light golden brown.
Step 9
Remove chicken from wok once cooked.
Step 10
Remove excess oil and leave enough for stir frying.
Step 11
Briefly stir fry the garlic, tomatoes, onion and capsicum. Once cooked to desired doneness, remove the vegetables and set aside.
Step 12
On low heat, add the sauce and fry briefly. Add a little bit of water if necessary.
Step 13
Turn off the stove. Add the chicken and vegetable to the sauce and mix.
