Ingredients

2beets
roasted, follow instructions to roast beets, OR vacuum-sealed beets, shredded
1 cupblack lentils
cooked
½ cupoats
1sweet potato
small, cooked, peeled and mashed
1red onion
peeled and grated
1 clovegarlic
peeled and grated
1 Tbspcumin
1 tsppaprika
1 tspred pepper flakes
optional
salt
to taste
pepper
to taste
1 Tbspolive oil
Instructions
Step 1
Roast the beets and cook the lentils.
Step 2
Place a sweet potato in the microwave for 8 minutes, turning over after 4 minutes. Remove, peel and mash with a fork
Step 3
In a blender or using a hand blender, blend the oats to create a flour.
Step 4
In a bowl, mix shredded beets, lentils, oat flour, mashed sweet potato, grated onion and garlic and spices until well-combined.
Step 5
Heat oven to 190 C (375F) and line a baking tray with parchment paper.
Step 6
Create burger-size patties and place on tray. Should make 9-12 patties.
Step 7
Drizzle with olive oil and bake in oven for 30-45 min flipping halfway through.
Step 8
Top with a drizzle of tahina and a sprinkle of fresh parsley
