Preheat the convection oven to 185 degrees Celsius

Clean the onion and cut into half rings
Step 3
Finely chop the tomato
Step 4
Mix the onion, tomato, balsamic vinegar and 2 tbsp olive oil in an oven dish

Cover with aluminum foil

Bake in the center of the oven for 20 minutes

Remove the foil after 20 minutes

Place the cod on top of the vegetable mixture

Sprinkle with salt and pepper and drizzle with 1 tbsp olive oil

Bake the everything in 10-12 minutes, or until the fish is cooked.

Blend all ingredients in a blender until smooth
