White truffle and honey garlic rub beef brisket

A beef brisket that is first marinated in red wine vinegar and a variety of herbs and spices, for about four to eight hours(if you want to marinate for more than four hours be my guest), then allowed to cook in a cooking bag with the marinade for 3-4 hours slowly raising the heat every 30 minutes till reaching a temperature of 320°F. Then once it's been fully cooked and the color satisfies you, first glaze with white truffle olive oil and then rub on your honey garlic BBQ rub. Enjoy!

honey garlic BBQ rub

Beef brisket
idr or I don't remember the exact weight but pick the weight that feels right to you

2 tablespoonsPaprika

¼ cupRosemary
chopped

2 tablespoonsSage
dried, rubbed, or 1/4 cup freshly chopped

¼ cupOlive oil
for the marinade, white truffle olive oil 2 Tablespoons for coating

Red wine vinegar
1/2 cup for marinating+cooking, opt, possibly diluted with 1/4 cup of water

1 tablespoonmustard powder
or dill, either depending on your preference, will be used for the pre-cooked rub

½ cuponions
Chopped, fresh, finely chopped

¼ cupParsley
freshly chopped

1 tablespoonGarlic powder

lemons
Chopped

limes
juice of a lemon or lime+zest, optional for a slightly citrusy note
Instructions
Step 1
Marinate: Combine all the marinade ingredients (paprika, rosemary, sage, olive oil, red wine vinegar, dill/mustard powder(optional), onions, parsley, garlic powder, lemon/lime juice) and coat the brisket thoroughly. Marinate for 3 hours or overnight.(Also I forgot to add, first tenderize the meat and then score it either with a fork or knife)

















Step 2

Cook: Place the brisket in a cooking bag with the marinade, or in a pan with the marinade poured around it. Cook in the oven, starting at 250°F and gradually increasing to 320°F over 3.5 hours.(increase the temperature every 20 minutes until reaching 320)(don't add the ingredients again just use the marinade and the ingredients you used during step one)(also before putting in the oven, coat with a light amount of regular olive oil and some of that fire and smoke honey garlic BBQ rub, not too much though as to not drown out the other flavors)














Step 3

Finish: Once cooked, remove the brisket from the oven. Drizzle with white truffle olive oil and apply a final light coat of fire and smoke honey and garlic BBQ rub before serving.
