Instructions

Step 1
Add butter pieces in bowl. Melt 4 min/160F/speed 2. Transfer to jar you'll use to store sauce.
Step 2
Insert butterfly whisk. Place water, lemon juice, egg yolks, salt and pepper into mixing bowl and heat 2 min/160°F/speed 4.
Step 3
Meanwhile, using the entire time indicated, mix 4-5 min/speed 4 while very slowly pouring reserved melted butter onto mixing bowl lid, letting it drizzle around measuring cup in a thin stream onto rotating blades to create an emulsion. Remove butterfly whisk and serve immediately.
