Step 1
Put the lentils garlic and thyme in a small pot, add 4 cups of water and bring to the boil over a high heat. Reduce to a medium low heat and simmer until lentils are tender, about 25-30 minutes. Drain and let cool for 10 minutes.
Step 2
To make the tzatziki combine the yoghurt cucumber and garlic and stir. Set aside.
Step 3
Transfer the lentils to a large bowl and mash until about half the lentils are crushed. Add the onion, breadcrumbs, eggs, salt, pepper and paprika and stir until throughly combined. Make 4 pasties about 1/2 inch thick.
Step 4
Coat a large non stick pan with olive oil over a medium heat. Carefully place the patties on the pan and cook until brown, 4 minutes each side.
Step 5
Place on a bun. Top with the tzatziki sauce and serve.
