Instructions

Step 1
Preheat over to 425F/220C. Coat two large baking sheets with cooking spray.
Step 2
Combine the sweet potatoes, oil, paprika, salt and ⅛ of the black pepper in a large bowl, tossing well to coat. Arrange one of the baking sheets in a single layer. Bake for 30 minutes, turning once, or until browned and cooked through. Remove from oven and keep warm.

Meanwhile, whisk the egg whites, mustard, cayenne and remaining ⅛ of black pepper in a medium bowl. Combine the bread crumbs and thyme in a shallow dish. Working one fillet at a time, dip the halibut in the egg white mixture, shaking off excess, then roll in breadcrumbs to coat. Place on second baking sheet. Repeat with remaining halibut.

Bake the halibut for 12 minutes, turning once, or until the crumbs are golden and the fish flakes easily. Divide the fish and sweet potatoes among 4 plates. Serve with lemon wedges and malt vinegar, if desired.
