Ingredients
4 servings
2 Tbsvegetable oil
1 poundfrozen shrimp
large, peeled, deveined and tail off
1 ½ tspcreole seasoning
1andouille sausage
fully cooked
1onion
small, finely chopped
2carrots
large, finely diced
3celery stalks
finely diced
1 x 10 ozdiced tomatoes and green chilis
drained
2 cupsrice
cooked
1 x 14.5 ozcan stewed tomatoes
Instructions
Step 1
In a large skillet, heat oil over medium heat. Add shrimp and shake 1/2 tsp of the creole seasoning on top. Cook until both sides are bright pink and cooked through. About 3 minutes, remove to a plate and set aside.
Step 2
Remove sausage from casing and cut into 1/2 in rounds. Add to the pan and saute until browned and warmed through. 2 to 3 minutes. Remove to plate with shrimp.
Step 3
Add onion, carrots, celery and remaining 1 tsp creole seasoning. Saute until vegetables are tender and start to turn golden, 5 to 7 minutes. Add both cans of tomatoes and cook, stirring until hot. Return shrimp and sausage to the pan and warm them to serving temperature, 2 to 3 minutes. Add the cooked rice, stir and serve.
