Instructions
Step 1
In a pan over medium heat, add oil/ghee, onions, bell pepper, garlic., and a heavy pinch of sea salt Sauté for 2-3 minutes.
Step 2
Next, add the sweet potato and chili powder and sauté for 1-2 minutes.
Step 3
Cover the pan and allow the potato mixture to cook for 15 minutes or until the potatoes are tender.
Step 4
Scramble the eggs in a bowl and pour into the sweet potato mixture.
Step 5
Sautê until it has reached your desired cooked level.
Step 6
Add the spinach to a plate.
Step 7
Add the egg/potato mixture.
Step 8
Top with ½ avocado, salsa, and optional hot sauce and microgreens.
