MEXICAN MEALS FOR WEIGHT LOSS: HUARACHES DE NOPAL ๐ฒ๐ฝ๐ This meal can be a quick 30 minute dinner or something you enjoy at the Memorial Day carne asada. It can easily be low carb but omitting the beans & feel free to add your preferred protein and add toppings of choice - avocado, pico de gallo, salsa, the list could go on! This meal packs all the authentic Mexican flavor with some minor tweaks to hit your fitness goals

Step 1
1. In a greased pan, brown the ground for 6-8 minutes or until fully cooked. Season to taste - garlic cloves, salt, pepper, & onion powder.

2. Cook 1/2 c pinto beans in a cooked pan for 4-5 minutes. Smash until smooth.
Step 3
3. Cut slits into the nopales to help them cook faster (do not cut all the way down) and add salt to taste.

4. Cook nopales on a comal for 3 minutes and flip. Cook for an additional 3 minutes and flip again.
Step 5
5. Divide 1/2 c pinto beans, 3 oz ground beef, and 28 G cheese between the 2 nopales. Cover and turn off the heat.
Step 6
6. Once the cheese has melted, transfer to a plate and add toppings of choice - 1/3 c salsa verde & 2 tbsp pico de gallo.
