Boil pancetta on low for 45min, set aside, let cool, thinly slice

Thinly slice celeries

Heat peppercorn and pepper (cut into pieces) in oil on medium, discard.

Put in pancetta and fry on median until slightly curled and some oil comes out.
Step 5
Fry garlic, ginger, 豆豉
Step 6
Add cooking wine and let reduce. Blend 豆豉 flavor with pork. Season with sugar and chicken flavoring.
Step 7
Turn heat to medium high and put in celeries and stir fry until softened a bit.
Step 8
Stir in green onion. Garnish with sesame oil.
