Great Big Vegan Burger
Delicious vegan burger. Instead of a bun I served it on top of a plate of spinach* and veggies with olive oil and balsamic drizzled on top. Filled me up.
*I have just learned spinach is not kidney friendly. Arugula, kale, mixed greens are better choices.

Step 1
Flax seeds need to be ground up and mixed with 6 tbsp of water.
Toast the quinoa and seeds. Dice and roast the mushrooms, onion and garlic with the olive oil and balsamic. 10-15 minutes.

Use a food processor to get the texture you want.
I froze most of the patties for future meals.
