Instructions

Step 1
Heat the oil in a small frying pan over medium heat. Cook the bacon for 3 minutes or until lightly browned. Transfer to a plate. Add the mushroom to the pan and cook for 2 minutes or until softened. Transfer to the plate with the bacon and set aside to cool slightly.
Step 2
Preheat a pie maker. Combine the bacon, mushroom, cheddar and spinach in a bowl and set aside. Whisk together the eggs and cream in a jug and season well.
Step 3
Turn off the pie maker. Lightly grease the pie maker holes. Divide half the bacon mixture among the prepared holes. Pour half the egg mixture over the top. Place a cherry tomato half, cut-side up, in the centres. Close the lid and turn on the pie maker. Cook for 5 minutes or until set and golden brown.
Step 4
Lift out the frittatas and transfer to a plate. Repeat with the remaining bacon and egg mixtures.
Step 5
Serve frittatas with toast and extra spinach.
