Qalayet Bandora - Jordanian Sauce

Eaten for breakfast, lunch or dinner and often considered a meal on its own, this is my version of Jordan’s most popular sauce, Qalayet Bandora! (Have it with fresh pita or just some bread)

Instructions
Step 1
Chop the onion in small pieces and, in a pan with 2tbsp of olive oil, cook on medium heat for 3 minutes
Step 2
While the onion cooks, chop the garlic and chili finely as well, and add them to the pan once the onion is translucent, cooking for another 2-3 minutes
Step 3
Wash and cut the tomatoes in circles or semi circles about 1/2cm thick. Add them to the pan followed by the salt and pepper
Step 4
Stir everything together, cover with a lid and cook for 10 minutes
Step 5
Remove the lid, mash with a wooden spoon and serve in a bowl. Top with cilantro and the remaining olive oil.
